    High heat to bring out the sweetness

    High heating accelerates the gelatinization of rice
    to bring out its sweetness.

    By maintaining continuous heating
    just like a kamado without
    the worry of boiling over,
    we bring out the deeper
    “Umami” and sweetness of the rice.

    The far-red effect brings out the flavor

    The donabe has high heat retention properties,
    allowing it to capture heat thoroughly and draw out Umami.

    Bringing out the Umami by mastering
    both heat intensity and pressure.

    Radiant heat from the far-infrared effect, which is approximately four times* greater than that of a metal pot, slowly brings out the flavor as a result of the high heat.

    * Based on a comparison of the inner pots between JRL-A100 and our conventional JKT-P100 (2020 model). This is a comparison of the amounts of on-peak far-infrared radiation energy between the authentic donabe and the metal pot when the temperatures of the inside bottoms of the pots are 230℃ and 110℃, respectively (presumed temperatures for cooking rice).

    Gentle bubbling that produces springiness

    The fine, consistent bubbles only seen in kamado protect the rice and make it more springy.

    Even with intense heat convection,
    fine and consistent bubbles encapsulate the flavor of each grain.

    The large amount of fine, consistent bubbles only produced by donabe surround the rice and protect the surface, so the grains are less likely to be damaged by bumping into each other.

The well-selected types of clay are blended at a controlled temperature and humidity. This enhances the quality of the pot while maintaining the charm of the natural materials.

Genuine ceramic inner pot that have undergone unglazed firing are checked even by sound so as not to miss the slightest flaw or hidden defect inside. Inspections cover dozens of areas, including dimensions, weight, and appearance.

Triple firing guided by mastery of clay and heat

Genuine ceramic inner pot that have been shaped go through the drying and firing processes. In the kilns, firing temperatures are strictly controlled to prevent unevenness in temperature between two donabe or between parts of the same donabe.

Harnessing the warmth of the soil

A highly efficient heating element is applied from the bottom to the sides of the genuine ceramic inner pot. This ensures that the heat from the IH is transferred throughout the genuine ceramic inner pot.

* This covers cracking of the inner pot and its inner coating.

* If you use it in a way that does not comply with the instructions in the instruction manual, it is not covered.

Warranty for cracking of the inner pot (genuine ceramic inner pot)

The genuine ceramic inner pot is over twice as strong as* general ceramic inner pots.

* Based on a comparison of bending strength between the donabe's base materials (based on our own research): Genuine ceramic inner pot = 70 to 80 MPa, conventional Banko clay pot for gas heating = 20 to 40 MPa

Warranty for peeling of inner side coating

A 3-year warranty *can be provided for the inner pot because material that does not peel easily at high temperatures is used.
