Tortilla Chicken Salad

A protein packed tortilla chicken salad with avocado you can savor on the go! These fresh tortilla wraps are so easy to make at home.

Ingredients

  • 1 1/2 cup soy milk or almond milk
  • 6 tbsp protein powder
  • 2 tbsp all purpose Flour
  • 1 egg
  • 3 tbsp olive oil
  • 1 tsp salt
  • Black pepper to Taste
  • Oil for frying

Salad

  • 150g steamed Chicken
  • 3 boiled eggs
  • 1 1/2 avocado
  • 1 1/2 tomatoes
  • Lettuce
  • Sesame dressing

Directions

  • Place ingredients into the container and firmly secure the lid.
  • Turn the dial to start the blender and set the speed around 8 to 9. Blend for 1 minute.
  • Cool it for 20 minutes in the refrigerator.
  • Heat a frying pan, add oil, pour in 1/6 of the dough, and fry until the bottom is golden brown, then flip it over and fry the other side.
  • Tear the salad chicken by hand, and thinly slice the boiled eggs, avocado, and tomatoes.
  • Place lettuce and # 5 on the baked dough, sprinkle with sesame dressing, roll it up, and serve in a bowl.

A CHICKEN SALAD WRAP YOU CAN FEEL GOOD ABOUT

We love a good salad wrap with chicken for lunch. A protein and veggie packed lunch you can easily eat on the go is a wonderful thing indeed. What we don’t love so much about lunch wraps is how much they tend to cost at the corner deli.

Solution: make them at home! The juicy chicken and avocado mix perfectly with crunchy lettuce drizzled in a nutty, savory and sweet sesame salad dressing – all rolled up in a fresh homemade tortilla.

HOW TO MAKE ‘TORTILLAS’ AT HOME

Now, while the form will be familiar here, these aren’t traditional Mexican tortillas. There’s no egg or milk in Mexican flour or corn tortillas. Think of these wraps as a delicious mash up between a tortilla and a crepe. 

To get started, simply place the ingredients for the batter inside your Tiger blender. Once the lid is securely in place, blend for a minute on level 9. Then pan-fry about ⅙ of the batter at a time in a lightly oiled pan on medium heat until the first side is golden brown. Flip and repeat on the other side. Keep an eye on them and make sure they don’t burn. Finally, transfer to a plate – load them up with the chicken, avocado, tomatoes, sliced eggs and sesame dressing – and get rolling!

VARIATIONS AND TIPS

  • Get creative with your proteins. Feel free to use roast beef, smoked salmon or even cold cuts in place of chicken if you prefer.
  • Mash the avocado. Sliced avocado is great. So it’s not a far stretch that guacamole would also go super well inside these tortilla salad wraps. Make your own – or grab some pre-made from the grocery store and guac it up!
  • Flavor it your way. If you prefer a different flavor profile, go for it. Salsa, ranch dressing, pico de gallo or baba ganoush are just a few suggestions of what you can use in place of the sesame dressing.
