Strawberry Almond Jelly

Ingredients

  • 1 1/2 cups almond milk
  • 1 1/4 cups strawberries, hulled
  • 4 tbsp granulated sugar
  • 5 tbsp gelatin
  • 1/2 cup water
  • 1 cup strawberries, cut in 1/2 inch (for garnish)
  • Mint (for garnish)
  • Simple syrup (for garnish)

Directions

  • Place cold water in a small bowl and sprinkle with gelatin while whisking with a fork.
  • Place 1 cup of almond milk and strawberries into the container and firmly secure the lid.
  • Turn the dial to start the blender and set the speed around 4 to 5. Blend for 30 seconds.
  • Put 1/2 cup of almond milk and granulated sugar in a pot, heat it. When it gets hot, turn off the heat, add the water with gelatin and the blended almond milk with strawberries, and mix well.
  • Pour evenly into cups and chill in the refrigerator to solidify.
  • Once solidified, garnish with strawberries and mint, and sprinkle with simple syrup if you like.

WHAT IS STRAWBERRY ALMOND JELLY

Think of strawberry almond milk jelly as a playful riff on an Italian panna cotta. Only instead of the traditional cream, we’re using almond milk for its mild nutty flavor and silky texture. Fresh strawberries are blended with the almond milk – and then mixed with a sugar, gelatin and water mixture – which is then refrigerated until it sets. The resulting texture is somewhere between a creamy custard and a jiggly gelatin dessert.

Expect a playful fruity flavor that is subtly sweet. A lot of that sweetness will depend on the ripeness of your strawberries. We love a balanced strawberry jelly where the fruit takes center stage. WHAT IS SIMPLE SYRUP

Simple syrup is made by heating equal parts (1:1 ratio) water and sugar until the sugar dissolves and the liquid thickens. It’s frequently used in cocktails, but a drizzle of simple syrup is the perfect way to add a little extra sweetness to this strawberry almond dessert.

TIPS AND VARIATIONS

  • There’s one easy step you can take for a visually refined looking dessert. When you pour the liquid into cups (right before refrigerating), remove any air bubbles that might form at the top with a spoon. Once the strawberry almond jelly has set in the fridge, you’ll be looking at the perfectly smooth surface of a restaurant quality dessert!
  • This almond jelly recipe also works with different fresh fruits as a flavor base. We like pureed strawberries best – but feel free to try other fruity favorites like mango, banana or even pitted lychee. Strawberry or apricot preserves work in a pinch as well.
