Cut the pork into 5cm squares, 3cm thick.
Place 1, ginger, green part of japanese leeks, sake, soy sauce, sugar, and water into the inner pot. Set it into the main unit and close the lid.
Select “Auto: 2”, press the pressure button, ensure the pressure button is raised, then press “START/SET”.
After cooking, confirm the pressure indicator pin has dropped. Press the pressure button to lower it, then open the lid. Plate the dish and garnish with shredded japanese leeks and mustard paste.
Transfer the cooking liquid to a separate pot, thicken with potato starch dissolved in water, and pour over the dish if desired.
You can also make half the amount. Select “Manual: Essence Pressure, Low, 1 hour 30 minutes” and heat.
