Pineapple Wine Sorbet

Sweet desserts can be for adults too. This refined pineapple wine sorbet tastes as fresh and clean after a 5 star meal as it does during movie night on the couch. Make it at home with just 4 ingredients.

Ingredients

  • 1 1/5 cups frozen pineapple
  • 1/5 cup white wine
  • 2 1/4 tbsp simple syrup
  • 2 tbsp lemon juice
  • Sprig of mint (for garnish)

Directions

  • Place ingredients except mint into the blender container and firmly secure the lid.
  • Turn the dial to start the blender and set the speed to “5” or “6”. Blend for 2 minutes 30 seconds.
  • Pour the contents into a metal container and chill in the freezer until solid.
  • Serve in a cup and garnish with mint.

You can substitute wine with water for a non-alcoholic desert.

IT’S WINE IN DESSERT FORM

For this dessert for the 21+ crowd, we combined the spirit of two of our favorite things in the world: grapefruit sorbet and frozen margaritas. And while we swapped both the booze and the fruit, the outcome of this pineapple wine sorbet is glorious! We’re using frozen pineapple for two reasons. First, it’s tart and adds the perfect amount of sweet acidity. But second – since it’s already frozen, you get a head start on the time it’ll have to sit in the freezer before you can break the spoons out and dig in. White wine, lemon juice and simple syrup are the only other ingredients you’ll need to whip up this frozen fruit sorbet.


Simple syrup is a 1:1 mixture of sugar dissolved into hot water. That mixture is then cooled and used as a sweetener you can pour into iced coffee and cold desserts without having to attempt the impossible task of dissolving granulated sugar in cold liquid.

HOW TO GET THE BEST SORBET TEXTURE

It’s all about the blend. Load everything (except the mint garnish) into the jar of the Tiger Edge blender – and blend for 2 ½ minutes on medium speed. Everything will be perfectly mixed – and can be placed in a metal container in the freezer to set. In fact, the only difficult thing about this recipe is waiting for the freezer to do its thing. But, we promise, it’s worth the wait!

RECIPE VARIATIONS

Change the fruit. Wine sorbet is delicious with mixed frozen berries – as well as mango or pitted cherries. And we’ve tried adding wine to our peach sorbet recipe. Spoiler alert: it was amazing.

Make it with rosé. White wine is absolutely delicious, but so is rosé! If that’s your go-to, then pop the cork and do your thing.

Make a virgin version. For a delicious sorbet the entire family can enjoy, just use water in place of the wine.

Make it more tangy. An extra squeeze of lemon juice or Japanese yuzu citrus brings even more contrast to this pineapple wine sorbet’s sweet and sour game.
