Ingredients

Ingredients below are for a 5.5-cup cooker. Double the ingredients for a 10-cup cooker.

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ cup onion, chopped
  • 1 Carrot, chopped
  • ½ cup red bell pepper, seeded and chopped
  • ½ cup green bell pepper, seeded and chopped
  • 1 teaspoon chili powder
  • 1 teaspoon cumin powder

Directions

  • Rinse quinoa under cold water and drain.
  • Place all the ingredients in the inner pot, stir and set in rice cooker.
  • Select the [QUICK] setting and press start.
  • Stir well and serve.

Well, this simple quinoa recipe has the trademark nuttiness of quinoa mixed with warming spices like chili powder and cumin. And don’t forget about the bright, garden freshness of green and red bell peppers, carrots and onions.

Using broth instead of water is a great way to infuse a serious depth of flavor into your quinoa without extensively raiding the spice rack. Now, we’re using vegetable broth to make this vegan recipe. However we’ve tried with chicken broth and it was delicious as well. So feel free to use what you prefer!

HOW TO COOK QUINOA IN A RICE COOKER

The biggest thing to keep in mind, whether you’re making quinoa on the stovetop or in a rice cooker, is the quinoa to water ratio. Once you’ve got that simple math figured out, the sky’s the limit!

In most cases you’ll want to use 2 cups of water (or broth) for each cup of uncooked quinoa.

And that’s typically the case whether you’re adding chopped veggies or just cooking quinoa on its own. 

To cook quinoa in your Tiger multi-functional rice cooker, just add your rinsed quinoa, veggie broth, chopped vegetables and spices to the inner pot. Then select the Quick setting and press the Start key.
