Tomato Banana Yogurt Smoothie

Start your day with a sweet fruit smoothie with an unexpected ingredient! A bit of tomato adds a garden fresh lycopene loaded dimension to this creamy banana yogurt smoothie recipe.

Ingredients

  • 3 ripe tomatoes, cored
  • A bunch of basil leaves
  • 3 tbsp olive oil
  • 2 tsp fresh lemon juice
  • 1 tsp salt
  • Black pepper to taste

Directions

  • Begin by scoring the tomatoes with an X on one end and place the tomatoes in boiling water and cook for 5 seconds.
  • Plunge the tomatoes into an ice-cold water to peeled the skins off, cut in half.
  • Place ingredients into the container and firmly secure the lid.
  • Turn the dial to start the blender and set the speed around 1 to 2. Blend for 1 minute.

A YOGURT SMOOTHIE THAT DOESN’T PLAY BY THE RULES

A banana smoothie in the morning sets the tone for the rest of the day. Getting a fruity infusion that powers your brain and body – and happens to taste amazing at the same time – can’t be wrong! And, while banana and yogurt smoothies are delicious as-is, we’ve always been drawn to recipes that color a bit outside the lines. So we added another iconic fruit: tomato.

Not only are tomatoes full of lycopene (a powerful natural antioxidant), their subtle fresh flavor adds another dimension when mixed with yogurt, bananas and honey. On their own, tomatoes have an interesting flavor balance of acid and sugar. What’s most interesting, is that they actually counteract some of the perceived sweetness from the honey in this recipe – delivering an overall poised and refined flavor. We can’t recommend trying this tomato banana yogurt smoothie enough!

HOW TO MAKE A BLENDED YOGURT SMOOTHIE

Just place all your smoothie ingredients into your Tiger blender and blend for around 90 seconds on the 10 speed setting. That’s it! All breakfasts should be this easy and delicious.

TIPS AND VARIATIONS

  • Try a different yogurt. We used plain yogurt in this tomato and banana smoothie, and it’s wonderful. But you could try using strawberry or lemon yogurt if you like things on the even fruiter side.
  • Play with the sweetness. You can easily augment the sweetness by using more or less honey.
  • Make it plant-based. For a vegan smoothie, use a plant yogurt like almond yogurt or oat yogurt – and omit the honey. For sweetness, try agave nectar or maple syrup instead. 
  • Supercharge your smoothie. A scoop of whey protein powder, barley powder or your favorite super-greens powder can turn any smoothie into a full on healthy meal.
